Did you know that beets are a super food? They improve brain health, aid in digestion, works as an anti-inflammatory, lowers blood pressure and boosts immunity...just to name a few!! All of that in a beet!!! This delicious appetizer is not only beautiful but good for you too! This is one of Audrey’s favorites and has been since she was a baby. Now that she’s older she helps make it with me. 😊
*If feeding to babies just omit the salt and purée the goat cheese with it.
Ingredients
1 large beet
goat cheese
1 T olive oil
1 T balsamic vinegar
1/4 tsp salt
1-2 cloves of garlic
fresh basil
crackers or sliced baguette
Using a carrot peeler, peel beets. Cut leaves and ends off. (You can sauté the greens with your other beets to eat as a side dish). Slice beets and sauté in olive oil and salt. Cook until fork tender. Transfer the beet to a food processor and add olive oil, balsamic vinegar, salt and garlic. Blend until smooth. Top crackers or baguette with goat cheese, then beet purée and top with fresh basil.
