Pad Thai is one of my personal favorites, but frankly it takes so many ingredients and can be time consuming. I just don’t always have time for that, so I came up with this super easy recipe that uses just a few ingredients!!
Ingredients
14 oz package of pad Thai noodles (wide rice noodles)
16 oz package of coleslaw mix
1/2 c hoisin sauce (add more as needed)
1/4 c soy sauce
2 eggs
1 T olive oil
1 clove of garlic
(This is a very large meal. You can easily cut it in half for a family of 4)
Optional Toppings (I use all of them)
chopped peanuts
fresh cilantro
fresh squeezed lime juice
sliced green onion
sriracha
Soak your noodles according to the package. Drain.
Heat your oil in a large wok. Sauté garlic and coleslaw until translucent. Add hoisin and soy sauce. Then add noodles mixing thoroughly. You can add more oil if needed.
Scoot your mixture to the side and add just a little oil. Scramble your eggs in the oil. You can do this in a separate skillet, but I’m just too lazy to do that LOL!
Top with your favorite ingredients!! That’s it!!🙌🏻
*You can always add a protein to this dish like chicken, shrimp or tofu!*
