I have been wanting to make something with lavender for awhile now, but I can never grow it. I recently have been reading up on using essential oils in cooking. Sound crazy? When using culinary grade essential oils like Young Living you can do all kinds of recipes with them!!! Just do your research on which ones can be safely ingested. Here was the crazy part...I couldn’t find any recipes that called for lavender essential oils. I decided to wing it, and surprisingly it turned out SO good!!! Now, I love the taste of lavender, so if you like a more subtle flavor just use a little less. And the name? It seriously tastes like lavender fields smell! Yum!!!!
Ingredients
1 3/4 c flour
3 T sugar
2 1/2 tsp baking powder
1/4 tsp salt
6 T cold butter
1 egg
1 tsp vanilla
5 T milk
4-5 drops of culinary grade lavender oil
Lavender Icing
2 c powdered sugar
1/2 tsp vanilla
2 T milk
2 drops of lavender oil
1 drop of purple food coloring (optional)
Whisk dry ingredients together and cut butter in using a pastry cutter or two table knives. Whisk eggs and wet ingredients and pour into dry ingredients. Mix gently until incorporated. Don’t over mix. Turn dough out onto a floured surface and roll to about 1/2“ thick. Using a floured table knife cut into triangles and place on a parchment lined baking sheet. You can brush the tops with milk to give it a golden brown crust, but it’s not essential. Bake 10 minutes at 450.
Whisk icing ingredients and drizzle over scones. Store leftovers in a paper bag.
Serve with coffee or earl gray tea. Bon appétit!!! 💕
