Pasta Salad 4 (actually infinity) Ways

My family asks for pasta salad for their lunches just about every week and I love it!! Do you know why? It’s super easy, you can make it out of practically anything you have, and I can portion them out ahead of time. That way I’m not making lunches every day!

I always use a small pasta shape like mini farfalle, elbow macaroni, rotini, or you can even get the frozen cheese tortellini. You really can do so many things with it! Be creative. Here is a guide of different mix-in’s I typically use:

Protein:

Baked tofu

Diced ham

Shredded chicken

Salami

Pepperoni

Black beans

Veggies:

Raw broccoli

Peas

Cherry tomatoes

Diced tomatoes

Corn

Olives (ok so this isn’t a veggie but what category do you put it in?)😂

Cheeses:

Mozarella balls

Parmesan

Shredded or cubed cheddar

Dressings:

Italian dressing

Ranch (made with plain Greek yogurt and a ranch seasoning packet)

Taco (plain greek yogurt and a taco seasoning packet)

Balsamic vinegar and olive oil with fresh basil

If you’re not feeling adventurous and want some combo ideas here are a few of our favorites!!:

Italian- cheese tortellini, cherry tomatoes, mozzarella balls, salami, balsamic vinegar, olive oil and fresh basil

Taco- pasta of choice, black beans, corn, diced tomato, shredded cheddar and taco dressing

Summer time- pasta of choice, diced ham, broccoli or peas (depending on which I have), Parmesan and Italian dressing

Ranch- pasta of choice, shredded chicken, peas, shredded cheddar and ranch dressing

That’s it!! It’s so simple and it gives everyone a break from sandwiches. Plus, I’ve found I can sneak veggies in these much easier😉.
