This simple quick lunch makes a great lunch on days that you’re dragging or working out and need some extra protein!💪🏻 I found this on Pinterest and altered it a bit (as I’m known to do quite often😉)
Ingredients:
2 c cooked barley
2 c raw spinach
1 can chickpeas
Feta cheese crumbles
2 hard cooked eggs
sunflower seeds
Sautee your spinach in just a little olive oil. Cook barley to instructions. Mix together and voila!
You can play around with this recipe easily too. Add some fresh tomatoes and avocado or substitute tofu for the eggs. The possibilities are endless with this base recipe!😄
Also note, I never add salt to mine. The feta gives it enough flavor. You can always add some cumin or chili pepper for flavor without adding too much sodium. Remember, it’s meant to be a HEALTHY lunch😉.
