This is such a good fall meal, but I couldn’t resist posting it now! Because, what kid doesn’t like Mac ‘n’ Cheese? This is the first in a series of my family’s favorite meals! I hope your kids like them too!!😊
Ingredients
1 lb elbow macaroni
1 15 oz can pure pumpkin
1/2 c ricotta cheese
1 c shredded mozarella (use cheddar for a more classic taste)
1 1/2 c milk
1-2 tsp salt to taste
black pepper to taste
pinch of nutmeg
Topping
1/2 c panko crumbs
1 T olive oil
Preheat oven to 350. Cook pasta and drain.
Mix all other ingredients and add to macaroni. Gently mix together and pour into greased casserole dish. Mix panko crumbs with olive oil and sprinkle over macaroni. Cover and bake 20 minutes. Uncover and bake additional 10 minutes.
Your kids will will never know there’s a vegetable in it that’s high in vitamin A and antioxidants!!!💚💚💚
