Quick Jambalaya

Ingredients

1lb chicken diced

1lb shrimp

1lb andouille (or milder sausage if you don’t like spicy)

1 c quick rice

1 can crushed tomatoes

1 package frozen onion pepper mix

2 c chicken stock

garlic to taste

olb bay seasoning to taste


Cook chicken in oil in a large pot. Add pepper onion mix, sausage sliced into pieces and garlic. Cook about 1 minute. Add all other ingredients (except shrimp) and cook 10 minutes (or however long it says to cook your rice, most are 10). Add shrimp a few minutes before it’s done. You can use fresh or frozen shrimp. Both cook nicely in this dish.

*Note: This picture was taken hot off the stove. As it sits the rice will absorb the moisture more and become much thicker. You can always thin it out with a little more chicken stock if you prefer.
