I’ve had several requests for this muffin recipe I found on Pinterest. My kids LOVE them! So, here it is:
Ingredients
1/2 c unsweetened applesauce
1 egg
2 tsp vanilla
1 c fresh spinach
1/3 c sugar
2 T vegetable oil
1 1/2 c all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Preheat oven to 350. Place first 6 ingredients in the blender and purée. Mix remaining ingredients in a separate bowl. Then add purée. Fill greased mini muffin tin 2/3 full and bake about 12 minutes.
