Strawberry Shortcake Bars

A friend of mine made these for a coffee play date one day and I HAD to have the recipe!! They’re a little like an English shortbread and a great pairing with coffee!!😄 These easy to make bars are perfect for a summer treat!! They can be whipped up in no time for an impromptu summer gathering. Mix it up with any flavor jam or even a lime or lemon curd!!! 🍋🍓

Ingredients

3/4 c unsalted butter softened

2/3 c sugar

1 egg

1 tsp vanilla

2 c all purpose flour

1/2 tsp baking powder

1/2 tsp salt

1 c jam

Directions

Preheat oven to 350. Cream together all ingredients except jam. Roll into 3 logs and place on parchment lined pan. Using your thumb press a channel down the middle of each log. Fill with desired jam filling being sure not to overfill. Bake 15-20 minutes. Let cool completely before cutting.
