Thai Buddha Bowl


This is one of my favorite bowls!!! This comes from several Pinterest recipes that I mixed together to make my own creation šŸ˜‰ You can put pretty much any protein or veggies in it and use it as a ā€œclean out the fridgeā€œ meal too!!!šŸ™ŒšŸ»


Ingredients

Rice noodles

Tofu

Slaw mix

Cucumber

Avocado

Red pepper

Hoison sauce

Soy sauce

Olive or sesame oil

Sesame seeds


Start by draining your tofu and wrap it in paper towels. Set a bowl on top for about 10 minutes. This will squeeze out some of the moisture. Then cut into cubes. On a foil lined and greased pan spread your tofu out and toss with a drizzle of hoison sauce and soy sauce. Bake at 425 for about 30 minutes.

Soak your rice noodles according to directions. Once soaked and drained, throw in a wok with oil and cook for 10 minutes. Add hoison and soy sauce to taste. I go light on the sauce because it has so much sodium, but you can do however much you like.

Assemble noodles with tofu and veggies. Top with sesame seeds. This dish is good warm or cold šŸ˜‹
